Tomato Relish |
Ingredients:

1 | tablespoon | olive oil |
1 | medium | onion (finely chopped) |
1 | clove | garlic (crushed) |
2 | tablespoons | flour |
2 | tablespoons | tomato ketchup |
11/4 | cups | passata |
1 | teaspoon | sugar |
1 | tablespoon | parsley (freshly chopped) |

Method: |
Heat the oil in the pan. Ad the onion and garlic and fry for 5 minutes, stirring occasionally. Add the flour and cook for 1 minute more, stirring continuously. |
Stir in the tomato ketchup, passata, sugar and fresh parsley. Bring to the boil and cook for 10 minutes, stirring frequently. Cover the relish and chill until required. |
For a hot and spicy version, add 2 teaspoons chilli sauce and 1 green chilli, finely chopped, at step 2. |
Tomato relish will keep in the fridge for a few days. |
