Tomato Relish

Ingredients:

1tablespoonolive oil
1mediumonion (finely chopped)
1clovegarlic (crushed)
2tablespoonsflour
2tablespoonstomato ketchup
11/4cupspassata
1teaspoonsugar
1tablespoonparsley (freshly chopped)

Method:

Heat the oil in the pan. Ad the onion and garlic and fry for 5 minutes, stirring occasionally. Add the flour and cook for 1 minute more, stirring continuously.
Stir in the tomato ketchup, passata, sugar and fresh parsley. Bring to the boil and cook for 10 minutes, stirring frequently. Cover the relish and chill until required.
For a hot and spicy version, add 2 teaspoons chilli sauce and 1 green chilli, finely chopped, at step 2.
Tomato relish will keep in the fridge for a few days.
